The Matcha I have is from Kyushu the 3rd largest island and one of the most beautiful, warm and lush green locations in Japan. I carry the medium grade ceremonial Matcha which can be whisked either thick or thin. As always with quality teas a little goes a long way. I personally prefer the thicker taste and I drink this tea on its own to enjoy the full spectrum of flavor. If you are a fan of Matcha then you need to try this particular tea because it is different from the taste that most people associate with Japanese Matcha that comes from the famous Uji area. The umami taste is not as intense and I find it well balanced.
The owner of the Busan, South Korea Tea Shop who supplies me with this wonderful healthy and tasty tea has this to say:It's located in southeast, far from Tokyo and Uji. It means that this area is much safer than Uji area because the tea farm in Kyushu is the farthest from Fukushima where nuclear power plant accident occurred.
The Japanese may believe that the best Matcha is from Uji area. Indeed Uji Matcha has powerful reputation. Most of Uji Matcha has what the Japanese consider an "umami taste"
(umami can be translated as "pleasant savory taste ..." source wiki) like the taste you can get from Katsuobushi (dried bonito).
Japanese people really like the umami taste a lot, but for Koreans, if the umami taste is too strong, we feel it to be greasy. We prefer the Kyushu Matcha to Uji one."
